Cajun Chicken with Amazing Broccoli

I LOVE Pinterest!  I have made a promise to start making more things from scratch and even with a 'few' cookbooks to look through and get recipe ideas, sometimes the 'same old' recipes don't do it any more.  Pinterest on the other hand, always looks SOOOO appetizing, so much so that I have already made this recipe....TWICE!! It is SO simple and SO tasty!

Here's what you need (I made a couple revisions to the original recipe found here):
2 boneless, skinless chicken breasts, cut into thin strips (I just cubed mine)
8 ounces linguine
2 teaspoons cajun seasoning (I made my own)
2 Tablespoons butter
1 pint of heavy whipping cream
chopped sun-dried tomatoes (found in produce section-I used half the package)
1/4 teaspoon dried basil (fresh if you have it)
1/8 teaspoon ground black pepper
1/8 teaspoon minced garlic
fresh grated parmesan for garnish

First you want to toss your chicken (uncooked) in a bowl with the cajun seasoning.  Melt butter in large skillet over medium heat, toss in chicken.

Cook your pasta while your chicken is cooking (I will be trying this with homemade pasta next time!).  Chicken will be cooked in 6-8 minutes depending on your heat setting.

Toss in the sun-dried tomatoes, basil, pepper and garlic.  Stir for a minute.

Pour in whipping cream and stir.  You'll need to turn down the heat just a tiny bit and let the heavy whipping cream simmer for about 10-15 minutes or until it becomes a thicker consistency.  Pour over the linguine, pair with Amazing Broccoli (found here) and enjoy!
