Known as the 'Best Broccoli EVER' by the Pinterest community, this has become a tasty new side dish here at the LaCava household. It's simple, easy, takes little effort, and is packed with flavor!
Items needed:
2-4 heads of broccoli
2-3 Tablespoons olive oil
4 cloves fresh garlic
1/8 teaspoon salt
1/8 teaspoon pepper
1/4 fresh lemon, squeezed
fresh grated parmesan cheese
I'm one of 'those people' who like to eyeball my cooking so these are just an estimate of what I actually use. Preheat your oven to 425 degrees. Line a jelly roll pan (that one with sides) with aluminum foil. Cut your broccoli and toss with 2 Tablespoons of olive oil. Dust with salt and pepper. Toss again. You can either press your garlic or slice it (I used my Pampered Chef slicer tool and it gives you paper thin slivers of garlic perfect for this recipe). Toss broccoli again. Place in oven for 20-25 minutes until broccoli begins to brown a bit. Take out and toss with a couple drizzles of olive oil and a 1/4 of fresh lemon juice (NOTE: you may want to start with 1/8 of fresh lemon juice, taste it and then add more as you see fit. I used a 1/2 lemon the first time and lets just say we were all puckered up!). Top with fresh grated parmesan and Voila! A tasty side dish. It goes great with the Cajun Chicken Pasta recipe I will share next week! :)
